  • 1 lb ground beef (lean works best)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 4 cups beef broth

  • 2 cups milk (whole or 2%)

  • 1 cup elbow macaroni (uncooked)

  • 1 cup shredded sharp cheddar cheese

  • ½ cup shredded Monterey Jack or Colby cheese

  • 2 tablespoons tomato paste

  • 1 tablespoon ketchup

  • 1 teaspoon mustard (yellow or Dijon)

  • ½ teaspoon paprika

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 1 tablespoon butter

  • 2 tablespoons flour

  • Optional toppings: diced pickles, green onions, extra cheese
