One-Pot Macaroni Cheeseburger Soup (No Velveeta)
Ingredients
1 lb ground beef (lean works best)
1 small onion, diced
2 cloves garlic, minced
4 cups beef broth
2 cups milk (whole or 2%)
1 cup elbow macaroni (uncooked)
1 cup shredded sharp cheddar cheese
½ cup shredded Monterey Jack or Colby cheese
2 tablespoons tomato paste
1 tablespoon ketchup
1 teaspoon mustard (yellow or Dijon)
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon butter
2 tablespoons flour
Optional toppings: diced pickles, green onions, extra cheese
