Caramelized Butternut Squash with Feta, Walnuts & Cranberry-Honey Glaze
Ingredients
For the squash
1 medium butternut squash, peeled, seeded, and cut into 1-inch cubes
2 tablespoons olive oil
Salt and black pepper, to taste
½ teaspoon cinnamon (optional)
¼ teaspoon smoked paprika or chili flakes (optional)
For the glaze
⅓ cup dried cranberries
2 tablespoons honey
2 tablespoons balsamic vinegar or orange juice
1 tablespoon water
Toppings
½ cup walnuts, roughly chopped
⅓ cup crumbled feta cheese
Fresh parsley or thyme (optional)
