Company Pot Roast
Ingredients
3–4 lb chuck roast
Salt and black pepper
2 tbsp olive oil
1 large onion, sliced
3–4 cloves garlic, smashed
3 cups beef broth
1 cup dry red wine (optional; you can use more broth instead)
2 tbsp tomato paste
2 tsp Worcestershire sauce
1 tsp dried thyme (or 2 sprigs fresh)
2 bay leaves
4 carrots, cut into large chunks
1½ lb baby potatoes (or quartered Yukon golds)
Optional: mushrooms or pearl onions
