Company Pot Roast

Ingredients

  • 3–4 lb chuck roast

  • Salt and black pepper

  • 2 tbsp olive oil

  • 1 large onion, sliced

  • 3–4 cloves garlic, smashed

  • 3 cups beef broth

  • 1 cup dry red wine (optional; you can use more broth instead)

  • 2 tbsp tomato paste

  • 2 tsp Worcestershire sauce

  • 1 tsp dried thyme (or 2 sprigs fresh)

  • 2 bay leaves

  • 4 carrots, cut into large chunks

  • 1½ lb baby potatoes (or quartered Yukon golds)

  • Optional: mushrooms or pearl onions
